DIAVORA is an Arabian food house. Its first and only chapter is Kleija - the signature
pastry of Al-Qassim, hand-pressed against a wooden mould, filled with dates and
cardamom, and baked slowly over wood fire. This is not a menu. It is a house you are
being invited into.

Heritage - Al-Qassim to Cairo
A century of Qassim Kleija, carried across the desert to a house in Cairo. Every tray
is stamped with the same geometry: dates, cardamom, saffron, and the memory of a
wood-fired oven at dawn.
Process - Two Hours by Fire
Dough rests overnight. Filling is folded at first light. The mould is pressed by hand;
the oven fires for exactly two hours. Nothing about this is fast, and that is the
point.
Anatomy of a Kleija
- Golden semolina crust, embossed by a hand-carved mould.
- Slow-cooked Sukkari dates from Al-Qassim.
- Green cardamom, saffron, a whisper of rose.
- Baked over tamarisk wood for exactly two hours.
